Production Method

Bleaching unfermented cocoa beans with water at 85-100°C for 3-15 minutes. Drying is carried out at a temperature lower than 85° C. to obtain a dry product with a moisture content of less than 15%. The cocoa bean intermediate product whose particle size is not larger than 300pm and whose mass fraction is not less than 99% is made.
