Cocoa Powder Introduction
Plain old cocoa powder is hard to beat when it comes to delivering rich, dark chocolate flavor. It is made from finely ground partially defatted cocoa solids and is available in two varieties: Dutch-processed (also known as alkalized), which has had its natural acidity neutralized by alkali treatment, and natural (simply labeled unsweetened cocoa powder). Both taste bitter right out of the box, but Dutched cocoa has a softer, almost nutty flavor, while natural cocoa, which is lighter in color, has a fruitier, more acidic chocolate flavor.
