What is Tannic Acid?
One class of polyphenolic chemical called a tannin is tannic acid. Tannic acid's mildly acidic characteristics are due to the numerous phenol groups that are present in its molecule. While commercial tannic acid is commonly identified by its molecular formula C76H52O46, which is associated with decagalloyl glucose, in reality, it is a blend of several polygalloyl glucoses or polygalloyl quinic acid esters.
Depending on the plant source, a powdered tannin molecule may contain two to twelve galloyl moieties. Tara pods (Caesalpinia spinosa), Chinese gallnuts (Rhus semialata), Turkish or Chinese nutgalls (Quercus infectoria), and Sicilian sumac leaves (Rhus coriaria) are common plant sources from which commercial tannic acid is extracted. In conclusion, quinic acid or polygalloyl glucose derivatives are referred to as tannic acid.
