What are the main functional ingredients of White Kidney Bean Powder?

Glycoprotein:

1. α-AI

α-AI has a molecular mass of 28 800 and acts mainly on mammalian and insect α-amylases. Early use of the supercritical carbon dioxide method can extract α-AI from white kidney beans up to 12% but often mixed with trypsin inhibitors and lectins. The former can stimulate the pancreas to produce too much amylase, impairing or completely inhibiting α-AI activity. At present, the inhibition rate of α-AI extracted from white kidney beans can reach more than 90%.

 

2. PHA

The PHA species isolated from different varieties of white kidney beans are not single. One is a 50kD homodimeric protein composed of two 30ku monomers. One is isolated from a small white kidney bean with an apparent molecular mass of 136 Ku, which is a tetramer composed of subunits of 2 molecular masses (36.2 Ku and 32.2 Ku), with a sugar content of 4.93%. There is also a PHA with a molecular mass of 30~40 Ku and a specific activity of 1193.62 HU/mg.
