What is Fresh Red Paprika?

Fresh Red Paprika(capsanthin ) is a major carotenoid in the traditional Solanaceae plant, red peppers. The biosynthetic pathway of capsanthin is produced by β-carotene or its precursors through several structural modifications such as cyclization, hydroxylation, and epoxidation. The intermediate product is zeaxanthin, and this process is inseparable from the participation of capsanthin-capsanthin synthase. Pure capsanthin is deep carmine red needle-like crystals. Easily soluble in polar organic solvents such as grease, acetone, ether, chloroform, and dimethyl sulfoxide. It is almost insoluble in water, and it shows blue color when it reacts with a concentrated inorganic acid. 


The melting point is 181-182 ℃. Capsanthin is sensitive to temperature and will be degraded when exposed to high temperatures above 70 °C for a long time. Light and an acidic environment with a pH value of less than 5 can both promote the fading of capsanthin. The oxidation resistance of capsanthin is poor, and severe discoloration will occur under the action of the oxidant composed of the mixed solution of H2O2 and Fe2+. The ionic strength of NaCl had no adverse effect on the stability of capsanthin.

Is Fresh Red Paprika safe?

The tetraterpenoid orange-red pigment extracted from mature red pepper is called capsanthin as a whole, which mainly includes capsanthin and capsanthin. In the safety evaluation experiment of paprika red chilli powder, subjects ingested 100 mg of Fresh Red Paprika (containing 3.5 mg of capsanthin) every day for 12 consecutive weeks, and no adverse reactions were observed. From the above, it can be seen that capsanthin is extremely safe.
