What is Monascus Red Pigment?

Monascus Red Pigment is a secondary metabolite of Monascus. How did the Monascus Red Pigment come about?

The biosynthetic pathways of Monascus secondary metabolites Monascus pigment, MonacoillK, and citrinin were initially similar. They are all first condensed with acetyl-CoA and malonyl-CoA as substrates. The biosynthesis of Monascus pigment is usually the reaction of acetyl-CoA and malonyl-CoA to generate hexanone chromophore under the reaction of type I polyketides 1'rIlthase (PKS). 


The Monascus Red Pigment was obtained by transesterification between the hexanone chromophore and the medium-chain fatty acid produced by the fatty acid synthesis pathway. Then Monascus orange pigment is reduced to Monascus yellow pigment or Monascus orange pigment undergoes ammonia addition reaction (amillatioll) with an amino acid to generate Monascus red pigment.
