What is Capsanthin Pigment?
Capsanthin Pigment(3,3´-dihydroxy-β, k-Caroten-6´-one) is a deep red oil-soluble pigment in the peel of peppers. It is also a major component of carotenoids in red pepper fruits, and its molecular formula is C40H56O. It is mainly present on the thylakoid membranes in the pericarp chromoblasts of pepper (Capsicum annuum L.), accounting for 60% of the total carotenoid content.

How is Capsanthin Pigment metabolized?
First, phytoene synthase (Psy) converts 2 molecules of GGPP to produce phytoene. Secondly, under the action of phytoene dehydrogenase (Pds), it is oxidized to lycopene. Next, two branches are generated downstream of lycopene. One branch is that lycopene forms α-carotene under the joint catalysis of Lcyb and lcye enzymes, and Crtz enzyme and O2 work together.
Finally, lutein is formed. Another branch is that lycopene is catalyzed by a single enzyme Lcyb to form β-carotenoids. Finally, capsanthin and capsanthin are formed under the joint participation of a series of enzymes and O2.
In immature pepper fruits, both Lcyb and lcye enzymes are present, but Ccs is not expressed, so β-carotene and lutein are the main carotenoids. After entering the green ripening stage, the Ccs gene began to express and gradually increased, and the zeaxanthin was catalyzed by the Ccs gene to form capsanthin.
