What is Gardenia Blue Powder?
Gardenia Blue Powder is an internationally popular natural food additive with strong water solubility. It is a dark blue powder obtained from gardenia fruit through microbial fermentation or enzymatic biotransformation.
Gardenia blue pigment has the advantages of stable physical and chemical properties, good tinting strength, and food safety due to its unique blue tone.
My country has listed it as a licensed food additive since 1989. It is widely used in food and beverages, medicine, daily chemicals, and other fields. Some studies have reported that in wine production, gardenia blue is an indispensable ingredient in compound colors, such as pomegranate red.

How to prepare Gardenia Blue Powder?
The preparation methods of gardenia blue powder can be summarized into two types. One method is to directly add the crushed gardenia fruit to the medium, completing the fermentation, hydrolysis, and synthesis in one step. This method not only results in lower product quality but also causes a waste of gardenia yellow pigment.
What Are the Characteristics of Gardenia Blue Powder?
Gardenia blue powder is a dark blue liquid or powder. It is easily soluble in water but insoluble in more than 30% of organic solvents such as ethanol, ether, acetone, and petroleum ether. The maximum absorption wavelength in an aqueous solution is 590 nm. It has good heat and light resistance and is stable in the presence of metal ions. It also has strong tinting strength.
The stability of gardenia blue is much better than that of chlorophyll. When the pH value is between 4 and 8, the blue color is stable. At a pH value of 3, reversible condensation occurs, and at a pH value of 9, the blue-violet color is stable. No adverse reactions were found in toxicology tests. The oral LD50 in rats was 16.7g/kg, and the ADI (Acceptable Daily Intake) does not require special regulations.
Applications:
Gardenia blue is mainly used as a coloring agent in hard candies, pectin, agar, pudding, biscuits, loose cakes, cake mixes, creams, ice cream, dairy products, vegetables, green beans, and other canned foods, as well as in beverages, juices, etc.
